321H has a controlled minimum carbon content to ensure elevated-temperature creep strength. The H grade is what most refinery specifications call for above 540°C. From a fabrication standpoint, 321H welds slightly differently - the higher carbon means more carbide precipitation risk if stabilization isn't effective, which puts more emphasis on proper welding parameters.
